TasteAtlas for Africa puts Algerian "rechta" at the top of its ranking

Rechta is a traditional Algerian flat noodle dish, typically served with chickpeas, chicken and vegetables.

"It is frequently served on Fridays, but especially during festive or religious events. According to Ibn Khaldun's writings from 1401, the rechta was presented to him by the Amir Tamerlane - under the Turko-Mongol empire - on the eve of the latter's conquest of Damascus. (Arab News).

Other Maghrebi dishes made it into the TasteAtlas ranking, including shakshouka and tajine with lemons.
